Chicken Salad

I have a confession to make. I am a recipe book whore.  Seriously, I love books filled with pictures of beautiful, colorful, healthy food.  Heres my top recipe books that I am in absolute Paleo love with:

#1. The Food Lovers Make it Paleo by Bill Staley and Hayley Mason

#2. Primal Blueprint Quick & Easy by Mark Sisson and Jennifer Meirer

#3. Everyday Paleo by Sarah Fragoso

Im going to pick up Well Fed next month when I go to Seattle and I am looking forward to trying EVERYTHING Melissa Joulwan has thought up!

Heres a recipe based on a recipe in Primal Blueprints that has been a household favorite for the past two weeks!

1 bag of chicken tenders (or a rotisserie chicken)

1/4 jicama

1/2 japanese cucumber

1 red radish

equal parts tahini and white wine vinegar

Cut the chicken tenders into bite size pieces, sprinkle with salt & pepper, brown on the stove top in oil of your choice.  Remove from pan and let cool.  Dice jimaca, cucumber and radish.  Add to chicken.  In a separate bowl, mix the equal parts tahini and vinegar, add to chicken.  I eat this by itself, on lettuce as a wrap and on shredded lettuce for a salad.
