BBQ Chicken & Strawberry Salad

Paleo Yard Bird

2 packs of Chicken thighs

1 T. garlic herb seasoning (Mrs. Dash)

1 t. paprika

1 t. onion powder

1 t. garlic sea salt

pinch cayenne

*everything I used was from the commissary

Take chicken out of fridge, rinse in cold water, pat dry with paper towels and let sit on the counter (not touching each other) for 45 minutes.  While you wait you can start the coals, update your facebook and start on the salad:

Strawberry Dressing

2 T. EVOO (or any oil… I think Im going to try macadamia nut next time)

1 T. vinegar of your choice (I used balsamic but next time Im going to use apple cider)

1/2 T. Dijon mustard

salt and pepper

Place all of your ingredients in a tupperware (one that seals really well) and shake it like a Polaroid picture for 20 seconds.  Put it in the fridge and grab some spinach, strawberries, red onion and goats cheese.  Also grab a caveman-size handful of walnuts. Warm the walnuts on the stove on med/low heat (stirring periodically).  Tear the spinach, dice the strawberries, and thinly slice the red onion.  Place the spinach, strawberries, onions in a serving bowl, top with crumbled goat cheese and the warm walnuts.

Now that your facebook is updated, the salad is 95% done, throw the chicken on low/med heat for 10-12 minutes on each side.  Take it off the grill, put it on a pretty serving platter and let it rest while you throw the rest of the salad together. Add the vinaigrette to the salad and toss the salad like you mean it.  Dinner is served.
