Paleo Lemon Artichoke Chicken

Since 13.4 my armpits feel like they have been stretched out like Gumbi.

Yay… 80’s!

I’ve always been a big fan of wearing deodorant but the past few days I’ve been taking my adoration of gel Secret to a whole new level.  I’m putting on deodorant three to five times a day.  I’ve been using the Secret deodorant gel as my secret armpit massagers… anyone else been doing it too???  Must have been from those 6 toes to bar… and the 15 attempts.

Just as the soreness finds its way to the rear view mirror 13.5 will be announced and a different body part will be silently screaming in agony.  Yay.

Until then, lets talk food.  Yesterday was day 1 of the Whole 30.  Day one is always the easiest for me.  For lunch I had curry chicken salad (diced chicken, diced red onion, white raisins, 1/4 c paleo mayo, 3 T madras curry powder, 1 t minced garlic & 1 juiced lime) on a bed of salad greens and for dinner I made a hybrid of Olive, Garlic & Lemon Chicken & Lemon & Artichoke Paleo Chicken.

Paleo Lemon Artichoke Chicken

  • 2 packages of chicken drumsticks
  • 1 can of artichokes quartered
  • 1 onion sliced thin
  • 3 T minced garlic
  • 3 T coconut oil
  • 1/2 jar capers (near the pickles at the commissary)
  • 2 lemons (one juiced one sliced)
  • 1/2 c chicken broth
  • lemon pepper and salt

Preheat oven to 350.  Season chicken with lemon pepper and salt.  Add coconut oil (or fat of choice) to cast iron skillet and heat to med.  Brown chicken.  Remove chicken from pan (no the chicken will not be cooked all the way).  Add onions and cook until they soften… scraping all those chicken bits off the bottom of the pan.  Add garlic and artichokes until warm.  Turn off heat.  Add chicken broth and lemon and stir.  Place browned chicken on top of veggies- yes they will fit!  Top chicken with capers and lemon slices.  Cover skillet with tin foil.  Bake on bottom rack in oven for 35 minutes.  Remove tin foil and put skillet on top rack.  Change the heat to “broiler” at 500 degrees for about 10 minutes…. watch closely!

We ate the chicken like The Croods.
