  • Paleo Chocolate Banana pies by Aisha: Put 1/2 cup of almonds and 1/2 cup of walnuts in the food processor and then blended. After that I mixed in about 1/4 cup unsweetened coconut and about 1 tbsp of maple syrup and flattened it into a pie pan and baked at 350 for about 10 minutes till toasted. Then melt 6 ounces unsweetened chocolate, half a can of coconut milk, about 1 tbsp of coconut butter and between 1/4 cup and 1/3 cup of honey. Then I added one mashed up banana to it. Now, I let the crust cool a little then smeared a layer of almond butter then a layer of sliced bananas, then poured the chocolate mixture over top. Then I put it in the fridge for about two hours to firm up. Works best if you let it set overnight.Sidenote* I do not measure so these are all estimates. Taste as you go to get the flavor you like. Enjoy!!

  • Pumpkin Spice Cakes by Pheobe (I use 3 bananas instead of the pumpkin, 1 tsp cin instead of pumpkin spice, only 4 eggs, and 1/4 cup coconut flr and 3/4 almond flour, and half the honey – lol, did you catch all of that?)

  • No Bake Almond “Cookies”:1 cup sliced almonds, 2/3 cup toasted coconut flakes, 1/2 cup almond butter, 1/2 cup ground flaxseed, 1/2 cup chocolate chips (optional), 1/3 cup honey, 1 Tbsp. chia seeds (optional), 1 tsp. vanilla extract:  Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week. Makes about 20-25 balls. Quick, easy and oh so yummy. by Lisa
