Coffee, fig and beef… it’s whats for dinner

The first week of school is going good for MC and JR.   JR loves his teachers and MC is making new friends.  It’s been a bit more chaotic around the house with the hubster on his man-cation but with the help of a super awesome nanny- everything is getting done!

Here’s been some of the awesome things of the past few days:

Crock Pot Mocha-Rubbed Pot Roast from Stupid Easy Paleo.  Next time I will cut the rub recipe in half.  Wait.  Next-next time I’ll cut the recipe in half.  Ive got plenty for next time!!!  For the beef I went with the easy way and used the Chefs Olive Mixes Black Mission Fig Balsamic Vinegar (yes they ship APO) instead of pureeing real figs.  My way worked, however, I definitely wantt to do by the book next time!!!

I had seen this recipe on Pintrest and was dying to make it.  Then I cut my commiscary watermelon.  It was complete mush.  Instead of scrapping the idea, I remembered I had one left over dragon fruit.

Dragon Fruit Salad

  • 1 dragon fruit, sliced super thin
  • 1/2 c blueberries
  • mint and basil finely chopped

Mix it make it look pretty.

The verdict was split down the middle.  JR and JY did not like it.  At all.  Said it tasted like coffee.  Uh, ok.

I have tried the mashed cauliflower recipe a few times and haven’t found one I liked.  Last night, I found my way.

Garlic Mashed Cauliflower

  • 2 bags frozen cauliflower
  • 1/2 c chicken broth
  • 3 T butter or ghee
  • 1 T granulated garlic (or garlic powder)
  • 1/2 T onion powder

Put cauliflower in a pot with 1 inch of water.  Cover and bring to a boil for about 6ish minutes.  Turn off burner.  Drain by using the lid as a strainer and receive a free steam facial.  Put the pot with the drained cauliflower back on the hot (but turned off ) burner.  Add the rest of the ingredients.  Use a hand held blender.  A blender, ninja, and food processor just doesn’t do it.

I boiled the fig-onion liquid down like the recipe said.  It didn’t get much thicker, but it gave me time to make the salad and cauliflower.

Another super awesome thing that happened this week is that I got certified at work at a “Watch Supervisor”.  Just nod your head, smile and pretend your super impressed.  Im stoked!

Rogue fitness has a specific website for equipment to be delivered to APO address: www.rogueapo.com.  I had to email them back and forth a few times, but Momma finally got what she wanted!  The hubsters man-cation is over soon and my journey to pull-up ville will commence!  Wonder who will get them first: me or JR!?!?!!!!!

Of course a week in this house cannot be all coffee dinners and pull up bars- oh no!  Here’s some of the things that even it all out:

Breakfast this morning I was feeling frisky and thought I’d try out PaleoOMGs pancake recipe.  The first one turned out like this:
